Campbell’s Tomato Soup Cake

Tomato Soup Cake
 
To commemorate the 29th anniversary of the death (February 22, 1987) of Andy Warhol and pay tribute to his Campbell’s Soup Cans: Team Trillkins’ Campbell’s Tomato Soup Cake.

Tomato Soup Cake Ingredients
 
Made a 1 layer 9 inch cake and 1 cake in a 10 ¾ can:

  • 2 cups all purpose flour
  • 2 eggs
  • 1 cup granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoon allspice
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ½ cup Crisco (or use butter instead)
  • ¼ cup water
  • 1 can (10 ¾) of Campbell’s Condensed Tomato Soup (yes, tomato soup)

 

  1. Preheat oven to 350º F. Grease the cake pan and a clean tomato soup can (once you have poured out its contents).
  2. Stir all dry ingredients together in a large mixing bowl.
  3. Add the shortening, eggs, water, and tomato soup.
  4. Beat with electric mixer on low-medium speed until blended. Increase speed to high and beat some more.
  5. Pour the batter to fill the can halfway, then pour the rest into the 9 inch cake pan.
  6. Bake for 40 minutes, then let cool for at least 20 minutes on a wire rack.

There was a slight blowout from the can during the baking process, so put it on sheet tray just in case.

Had the labels customized and printed at a local FedEx Office, then cut along the gold borders running horizontally to fit the can.

Tomato Soup Cream Cheese Icing Ingredients
 
For the cream cheese frosting (had to make more than is pictured above):

  • 12 ounces cream cheese
  • 4 tablespoons milk
  • 3 teaspoons vanilla extract
  • 1 ½ cups of powdered sugar

 

  1. Beat the cream cheese, milk, and vanilla extract in a large mixing bowl with an electric mixer on medium-high speed until pretty much blended.
  2. Add in powdered sugar in 3 increments until fully blended.
  3. Let it sit out until ready to use.

A piping bag was used to frost this cake because no one here knows how to do it with a spatula.

Here it is in all of its glory and surprisingly very good: Tomato Soup Cake in a Can. In hindsight, all of the batter could have been poured into multiple soup cans and presented accordingly. But it was the freaking weekend baby and no one here had time for that.
